On the Menu: Nummy Muffins!

ALRIGHT, so it's been a while since my last blog.  Sue me.  Truth is, I've been on this really neat weight loss program which, while highly effective and pretty darn easy (10lbs and 10 inches in 20 days, a-thankyouverymuch) I haven't really set foot in my kitchen to share any yummy concoctions.

I figured, however, just because I can't indulge for the next few weeks, doesn't mean that I can't share the deliciousness.  So here it is.

I TRULY wish I knew where in the world wide web I acquired this recipe, but alas I do not.  All I do know is that it's easy, its kid approved, and above all, it is TOTALLY delicious.  The kids call them Nummy Muffins.  I call them Magic...

FIRST!  Hard boil eggs. Making about 8 muffins, I used about 9 eggs and had some leftover so.....yeah. Use whatever.

NEXT. Brown some sausage. Oh yeah.... sausage.



Easy so far, yeah?

Next up, Chop up the hard boiled eggs. (Please let them cool first, yeah?) While you''re there on the cutting board, chop up the sausage. (again, with the cooling thing.)




Choppy-choppy-choppy. Add some cheese! Cheese of your choice! As much cheese you want!! Go crazy! CRAAAAZAY!!!  (Or, about a cup of cheddar, like me.)


Also add about a cup of Mayonaise. (Or Miracle whip, chill out people.)  This is mostly just to hold the mixture together, so you really don't have to worry about what it's going to do to the flavor.






Mmmmmm. forbidden Mayonaise.....


Now some garlic, maybe a teaspoon or two? Or three, four, five, whatever you like.  (I'm more of a one or two teaspoon, if my boyfriend had his way, it would be seven or eight, haaa) And a couple of shakes of Worchestershire sauce.






Mixy-mixy-mixy....






Oohhhhhh yeahhhhhhh.......

NEXT, scoop up this absolutely delicious mixture onto English Muffin Halves.  a-like so:





Wait for it.....here comes the best part. Set your oven on broil and stick these little puppies in there for 5 minutes or so.  Just enough to melt the cheese and warm them through, really. Annnnnnd?  Wait for it.....wait for it.....




TA-DA!!! Oh man, those things look so good right now, curse this diet.

Anyways, I've never ever heard a complaint about this breakfast, it's one of the families favorites.  The best part about it is that you can mix it all up the night before and stick it in the fridge.  The next morning, you literally have breakfast ready to go in about 7 minutes.  Not to shabby, if you ask me.

Also, these picture don't do ANY of my cooking justice. Not at all. I need a better camera, Ha.  But in case the photos turn you off, just try it anyways. I promise you won't be disappointed.
